Brutally Honest Review: Is KFC’s New Saucy! Concept in Carrollwood a Flop?

TL;DR: KFC’s new experimental spinoff, Saucy!, just landed in Carrollwood. Trying to copycat Raising Cane’s chicken tenders and Swig’s viral “dirty sodas”, the concept completely misses the mark with oily, wet chicken and aggressively over-sweetened drinks.

Carrollwood is quietly becoming the corporate testing ground for big-box food experiments. Just last year, Cooper’s Hawk rolled out their massive Piccolo Buco concept right on Dale Mabry. It’s obvious these multi-million dollar brands view our neighborhood as the perfect demographic to test out wild ideas before taking them nationwide.

The latest corporate giant to treat us like lab rats? Kentucky Fried Chicken.

They just dropped a massive, neon-pink, high-energy flagship called Saucy! by KFC right at 12650 N. Dale Mabry Hwy. This isn’t your childhood bucket-of-chicken joint; it’s a tech-forward “vibe dining” experiment built for the digital-first crowd.

The business strategy here isn’t subtle. Saucy! is a direct, Frankenstein-style combination of two massive fast-food trends dominating social media:

  1. The Chicken Tender War: A direct clone of the ultra-focused, heavy-sauce model popularized by Raising Cane’s.
  2. The Dirty Soda Craze: Custom-mixed carbonated drinks spiked with creams, flavors, and syrups, ripped straight from the playbook of Utah-born soda shops like Swig.

On paper, it sounds like the ultimate cheat-day destination. But when I rolled through, the actual execution was an absolute disaster.

The Food: Unrendered Fat and Extreme Sugar Shock

The core menu centers around hand-breaded tenders paired with an array of signature dipping choices like Chimichurri Ranch and Creole Honey Mustard. But fancy sauces can’t hide a fundamentally broken piece of chicken.

When you look at the photo , you can see exactly why I had to pull over. Instead of clean, steaming breast meat, the entire middle layer is a thick, pale, pasty band of pure, unrendered chicken fat.

The kitchen completely dropped the ball on temperature control or fry times. Because the fat didn’t render down, taking a bite meant getting a mouthful of squishy, slimy grease that sloughed entirely away from the crispy outer breading. It is an absolute texture nightmare.

To wash down the oil, I ordered one of their “DRIPS by Pepsi” crafted drinks—their corporate take on the dirty soda trend.

A true dirty soda relies on a smooth balance of cream and carbonation to cut through the sweetness. Saucy’s version tasted like straight flavor syrup pumped directly out of the bottle. It was aggressively, overwhelmingly sweet—the kind of intense sugar shock that coats your teeth and completely masks whatever flavor profile they were trying to achieve.

A One-Off Fluke or Flagship Reality?

The Tiny Disclaimer: To be totally fair, I am fully aware that this location is relatively new, and the kitchen staff is probably still dealing with standard opening-month growing pains and poor quality control. It’s entirely possible I just got incredibly unlucky, caught a bad batch of chicken, and ordered from a beverage line where the syrup pumps desperately needed to be calibrated.

But frankly? That doesn’t excuse the experience. When a multi-billion dollar brand builds a high-profile flagship in our backyard, the baseline standard should be cooked chicken, not a mouthful of cold grease.

The Verdict: You Decide

The concept behind Saucy! is undeniably smart. Merging Cane’s-style tender baskets with custom mocktails is a brilliant business move for the 18-to-35 demographic. But as it stands right now, the kitchen execution is a complete miss.

I’m dropping my honest feedback because the data doesn’t lie, but I want to hear from you guys. Have you braved the Dale Mabry drive-thru yet? Did you actually get a decent, crispy batch, or did you hit the exact same quality control nightmare?
